Vanilla Oatis Ice Cream Syrup

 In Blog

Dress up a bowl of vanilla ice cream with this recipe! This syrup is deliciously malty and sweet with a touch of bitter, a great match with the creaminess of the ice cream. Go ahead and experiment with this one – maybe mix into BBQ sauce, use on chicken wings or add a touch of mustard. Now you’re cookin’!

2 cups Ninkasi Vanilla Oatis
3/4 cup malted barley syrup (found at Whole Foods or other health food store)
1 cup packed dark brown sugar
1 tsp. sea salt

Add all ingredient’s to a heavy bottom sauce pan. On medium-high heat, while stirring, bring to slow boil. Immediately reduce heat to medium-low. Simmer while stirring often until liquid has reduced to about half its original volume, about 45 minutes. Remove from heat and let cool on stove top. Serve warm over good quality vanilla bean ice cream. Store in airtight container in refrigerator.

I can’t seem to find the VAnilla Oatis anywhere in Nor Cal anymore. Is it still being made?

Hi Martine! We no longer make the Vanilla Oatis version, but we do make regular Oatis. To locate it near you, be sure to check out our beer finder at and let us know if we can help! Cheers!
