It’s a never-ending conquest to find that perfect brine for your Thanksgiving turkey. But, fortunately, Executive Chef Andrew Hroza has found it for you. All you need is a few bottles of Sleigh’r, ingredients you likely already have in your kitchen, and 24-36 hours, and you’ll have a turkey brined and ready to roast and impress!
Sleigh’r Turkey Brine
- 3 cups brown sugar
- 3 cups water
- 3, 12 oz. bottles Ninkasi Sleigh’r Winter Ale
- ¼ cups black peppercorns
- 1½ cups salt (kosher)
- 2 onions, quartered and peeled
- 4 cups ice cubes
Set the ice aside and place all the other ingredients in a large pot. Simmer until all the salt and sugar have dissolved. Add ice and chill down in the refrigerator. Brine turkey fully submerged for 24-36 hours depending on the size. Roast and baste according to your favorite method!
