We asked our staff for their favorite combinations and have assembled the ultimate list of food pairings and recipes, guaranteed to make your mouth water.

Vegan Key Lime Pie
Galaxy Trippin’ is my go-to pairing with one of my favorite desserts, Vegan Key Lime Pie! The use of Galaxy Hops, with notes like peach, passion fruit, and papaya make this IPA remarkable, and perhaps most enjoyable with the interplay and complement of the refreshing and tart citrus flavors of the pie. This recipe is great for vegans and non-vegans. The best part is it’s also gluten and nut-free! My personal recommendation is to use a vegan store-bought graham cracker crust and to substitute your favorite sweetener. Mine happens to be raw agave syrup!

Instant Pot Carnitas
I am a self-proclaimed taco aficionado. And while I abhor eating the same thing twice in a row, tacos are always the exception to the rule. I could eat them every. single. meal. I judge every taco truck, stand, and purveyor by their carnitas. The only way to improve upon juicy chunks of pork with crispy edges, wrapped in a tortilla (or two!), and topped with a dash of green sauce is to bring a cold beer to the party. It’s hard to go wrong when reaching for a cold one, but lately, my go-to taco beer has been Galaxy Trippin’. Its tropical and citrus notes pair perfectly with the orange in Nom Nom Paleo’s Instant Pot Carnitas, and the velvety smooth finish is a nice contrast to the fire of a good green sauce.
Thanks to Nom Nom’s recipe making Carnitas’ at home is a breeze. So you’ve got no excuse to get to work on upping your guacamole game!

Brunch Mimosa Substitute
Galaxy Trippin’ makes an excellent substitute for a mimosa at brunch! It has prominent tropical and citrus notes, a zingy mouthfeel, and goes well with just about any breakfast or brunch entrée. In particular, Galaxy Trippin’ complements a bowl of toasted granola with a topping of some plain natural yogurt and fresh fruit such as kiwi or strawberry. The decidedly tropical hop aromas of Galaxy, El Dorado, and Azacca play well alongside the fruit, the lightly toasted malt matches with granola and the effervescent finish of the beer helps lift the yogurt off the tongue and refresh the palate, amplifying the whole experience.

Scallop Ceviche
When it comes to Galaxy Trippin’, you can’t go wrong with a seafood bake, and my favorite is Scallop Ceviche! Galaxy pairs great with these tropical flavors to help usher in spring a little quicker. For your ceviche, you’ll need: bay scallops, red onion, red and yellow bell pepper, habanero & jalapeno pepper, pineapple & lime juice, a shot of coconut rum, and topped with toasted coconut. Enjoy!

Classic Meatloaf with Charred Onion Relish (Serves four, with leftovers!)
If you’re local to Eugene, you may have noticed a special reprise of our Ninkasi Dinner Club, featuring fan-favorite recipe, Chef Andrew’s Classic Meatloaf with Charred Onion Relish! If you’re not local, we’re happy to share this recipe with you, so you can cook and enjoy it in the comfort of your own home, wherever that might be!
Ingredients:
- 1 lb. ground pork
- 1 lb. ground beef
- 2 large onion cut into quarters
- 2 Tablespoons of Worchester sauce
- 2 eggs
- ¼ C. heavy cream
- ½ C. sliced green onions
- 2 Tablespoons ketchup
- 1 Tablespoon whole grain mustard
- 2 teaspoons of salt
- 4 oz. breadcrumbs
- ½ C. mayonnaise
Procedure:
- Preheat oven to 400 degrees Fahrenheit.
- In a food processor, pulse 1 onion for 10 seconds. Add Worchester, eggs, heavy cream, ketchup, and mustard to the onions. Pulse for 10 seconds more.
- In a large bowl, mix the puree with both the ground meats and salt. Add breadcrumbs and mix thoroughly.
- Form in a loaf pan and bake for 40 minutes or until the internal temperature reaches 160.
- While the meatloaf is cooking, sear the other onion quarters on a sauté pan on high for 5 minutes on each side. Make sure to char the onion in the pan.
- Place the charred onions in the oven for 10 minutes.
- Puree the onions and mix with mayonnaise.
- Chill onion relish in the fridge while meatloaf cooks.
- Once the meatloaf reaches 160 degrees, add the onion relish to the top of the meatloaf and broil it for 5-7 minutes.
- Slice and enjoy!
